Fascinating review of the book Eating Puerto Rico: A History of Food, Culture and Identity. Rice plays a central role in the cuisine and national identity of Puerto Rico. Many factors contributed to this. Among them: the Spaniards brought rice to the island in the colonial period and West African slaves were familiar with its cultivation.
